Tired of classic pizza? Try this alternative!

When my daughter was home on a college break, she decided to find out if cooking was of an interest to her. She prepared many dishes and discovered how much work was needed to prepare a meal but also how much satisfaction a delicious dinner shared with family could provide.

While looking for ideas on-line, she found the pizza recipe which became the top choice for our family.

Pesto Vegetable Pizza

Ingredients

  • 1 pre-baked 12-inch pizza crust (I get the dough from local pizzeria)
  • 2 garlic cloves halved
  • ½ cup pesto sauce
  • ¾ cup packed fresh spinach chopped
  • 2 large portobello mushrooms thinly sliced
  • 1 medium, sweet yellow pepper julienned
  • 2 plum tomatoes seeded (if preferred) and sliced
  • cup packed fresh basil chopped (in absence of fresh, use dry to your liking)
  • 1 cup shredded part-skim mozzarella cheese (I also add slices of fresh mozzarella cheese)
  • ¼ cup Parmesan cheese
  • ½ tsp fresh or dried oregano

Instructions

  • Preheat oven to 450°. Place crust on an clean (do not grease) 12-in. pizza pan. Rub cut side of garlic cloves over crust; discard garlic. Spread pesto over crust (I crush garlic and mix with pesto sauce instead of rubbing garlic over crust). Top with spinach, mushrooms, pepper, tomatoes and basil. You may add slices of fresh mozzarella cheese. Sprinkle with cheeses and oregano.
  • Bake until pizza is heated through and cheese is melted, approx. 15 minutes. You may peak under the edge to make sure that the crust is golden brown.
